
I’m a sucker for banana bread. Not the regular banana bread, it’s the kind that’s really moist and flavorful and right when it comes out of the oven you put some grass fed butter over the top and hope to eat it all before anyone smells the aroma throughout the house. Yeah, that’s the stuff. But this recipe is even better! Why? Because it’s better for you! And it still taste amazing! Go ahead, give it a try and see for yourself! You’ll be going back for seconds for sure, or thirds or fourths, or just saving the whole batch to yourself. Oh, and one more thing, it’s super easy to make!! Have fun!!

What’s in it for me?
• ⅓ cup mct oil
• ½ cup maple syrup
• 2 eggs
• 1 cup mashed ripe bananas
• ¼ cup milk + 1 tablespoon of vinegar
• 1 teaspoon baking soda
• 1 teaspoon vanilla extract
• ½ teaspoon salt
• ½ teaspoon ground cinnamon
• 1 ¾ cups flour of choice
• chocolate chips
Well, how do I make it?
1. So you, Preheat oven to 325 degrees Fahrenheit. Butter up some muffin tins or loaf pan.
2. Mix vinegar and milk in small bowl and let sit for about 5-10 mins
3. Beat together oil, maple syrup, eggs, and banana.
4. Add baking soda, vanilla, salt, and cinnamon.
5. Now beat in the milk, Then add flour and mix just until combined. And then, of course, add in the chocolate chips!
6. Pour your batter evenly through muffin tins or pour in a loaf pan and bake immediately (try to avoid letting the batter sit, the baking soda and vinegar won’t do the same if it sits for a bit).
7. Bake until golden brown and the middle springs back to a touch! Smudge some delicious grass fed butter on top if you please (I do). Then hurry up and dig in before everyone else smells it. Oh yeah, and don’t forget to hide the evidence.
Notes: if you don’t have mct oil then coconut oil or butter will do just fine! Honey can be substituted with the maple syrup. I like to use Apple cider vinegar but white vinegar will work perfect as well! You can skip the vinegar if you want but this helps the overall texture. Chocolate chips are obviously optional but hey, who wants to skip chocolate?
