Healthy sweet potato basil frittata

Frittatas are simple easy stovetop egg dishes. Great for a quick meal with so many variations, this frittata is made with sweet potato, onion, sweet peppers, garlic, and basil, making it perfect for a healthy breakfast!

This serves 2-4 people, takes about 25 minutes, and taste delicious!

What’s in it?

6 eggs

1/2 sweet potato (about 1 cup cubed)

4 sweet peppers, diced

1/2 onion or 1 small onion

5 garlic cloves, minced

Salt

Pepper

Garlic powder

And a lot of basil:)

The easy simple steps…

1). Sauté the sweet potato with sweet peppers, onions, and garlic on medium-high heat until the potatoes are soft (about 8-12 minutes).

2). Beat eggs with salt, pepper, and garlic powder in a bowl. Pour over sweet potato mix and place basil on top. Cover with a lid and reduce heat to medium-low then leave covered until fully cooked (about 8-10 minutes).

3). Remove from stove and enjoy!

Sprinkle some cracked pepper or extra sharp white cheddar on top for some more yumminess.
