Green curry is like on the top of my most favorite foods list, so amazing the different combinations of flavors will just burst into your mouth! Served over some black rice makes it even better!!

It’s all about the ingredients…
- 5 fresh green hot chilies (we used Serrano’s)
- 3 shallots
- 1 Tbsp fresh ginger (or galangal)
- 3 inch piece lemongrass
- 4 kaffir lime leaves
- ½ tsp black pepper
- 1 Tbsp ground cumin
- 1 Tbsp granulated garlic
- 1 tsp salt
- 1/2 cup chicken stock
- 1 Tbsp oil of choice (we used avocado)
- 4 chicken breasts
- 1 can coconut milk
- Coconut cream from one can
- 4 red sweet peppers
- 6 kaffir line leaves
- 2 cups chicken stock
- Start your chicken, now make the paste…
- Sauté chillies, shallots, and ginger in oil until your house smells like yumminess.
- Add the lemongrass, kaffir leaves, lemongrass, spices, and chicken stock. Let it simmer for about 5 minutes. Then blend until smooth.
- In the chicken add the curry paste, coconut milk, coconut cream, chicken stock, sweet peppers, and kaffir lime leaves. Let it marry for about 10 minutes. Enjoy this authentic green curry! Serve with black rice for more nutrients.
