
The tart, the sweet, the tang, the amazing flavor…. this lemon curd is a must make, and it’s so easy to make! add the sugar, lemon juice, lemon zest to saucepan, then add eggs and slowly bring to a boil then remove from stovetop and add the butter. Let fully cool then enjoy! Spread it over toast or layer on some cake (that’s what this was for:)) or whatever else lemon goes good with!!

What’s in it?
- 3/4 cup fresh squeezed lemon juice (about 3 lemons and there zest)
- 1 cup sugar
- 3 eggs
- 4 tablespoons butter (cubbed)
How do ya make it?
- In a small-medium size saucepan on medium high heat (6 on our stove), mix sugar and lemon juice.
- Then add the eggs and beat well (i used a stick blender to make sure the eggs were fully mixed, any kind would work).
- String constantly bring to a low boil, by now it should be thickened, once it cools it with thicken up more. Right when it starts to boil remove from stovetop and stir in butter until it melts. Let cool and enjoy!!
I used this lemon curd for a filling on my brothers 4th (not 3rd;)) birthday cake a couple days ago!!! It was delicious!!!
