
Ever wonder if you could eat healthy but still satisfy that craving of a buttery chewy dense bagel? Here’s the healthy bagel recipe you have been looking for! I researched and researched to see what other people do for a healthy bagel recipe and I could not find anything beside switching white flour to whole wheat flour, so I decided it’s time to change that! These bagels are made with hemp hearts and chia seeds for a hearty breakfast. There also made with levain (sourdough starter) for the predigest probiotic health benefits, plus they taste amazing!!

I started with two kinds here, everything bagel and coconut sugar cinnamon bagel. My favorite was defiantly everything but if your a sweeter bagel person the coconut sugar cinnamon was delicious as well!

You can also totally change this recipe up a bit make your own kind of bagel, like Asiago by adding cheese on top, or you can do some mix ins like raisins or chocolate chips or even spice it up a bit and do a orange cardamom bagel or maybe you just want it plan! They would also taste awesome as a “egg-el”, just make an egg and top it with cheese and you got your self an egg-el. The possibility’s are endless!!

The trick to amazing bagels is not skipping on the boiling part, it adds that chewy exterior and soft inside.

Time: 8-12 hours to ferment and about 1 hour hands on. Makes 8 amazing bagels.
Takes seconds before there gone, but if there happens to be leftover these would save great for 5-7 days thanks to sourdough!

Now, how do ya make them?
First off, the ingredients:
- 130g levain (aka sourdough starter)
- 473g/2c water
- 1 Tablespoon honey
- 4 Tablespoons chia seeds
- 1/2 cup hemp seeds
- 1 1/2 cup old fashioned oats
- 3 cups whole wheat (preferably sprouted)
- 18g/1T salt
- 8-10 cups water + 3 tablespoons of honey
Now, how to make them…
- Pour levain in a large mixing bowl {don’t forget to feed your levain}. add water, honey, chia seeds, hemp seeds, and oats, mix well. Add flour and mix well until fully combined, let ferment for 8-12 hours (I usually leave it overnight) in a draft free place.
- Next day, take dough out of bowl and dived into 8 even balls. Poke holes into middle and let rest while preparing water bath.
- Preheat oven to 375 degrees. Butter/oil baking sheets.
- In a large pot or large pan, bring 8-10 cups of water with 3 tablespoons of honey to a boil. With a slotted spoon, drop bagels in boiling water. Let boil for 1 minute on each side then place on baking sheet.
- Sprinkle with desired toppings and bake for 25-35 minutes (depends on oven). They should start to brown and have a chewy exterior. Let cool slightly then slice, toast. butter up, and enjoy!!

Topping ideas:
- My favorite is everything spice: you can buy it or make it yourself. Just sprinkle on top of the bagel once they come out of the boiling water.
- Coconut sugar and cinnamon: add 1/4 cup honey to dough. Mix in 1/2 cup coconut sugar with 1 tablespoon of cinnamon and sprinkle on top once they come out of boiling water.
- Cheese bagels: add 1 cup cheese of choice to dough after fermentation. Sprinkle cheese after they come out of the boiling water.
- Other mix ins: add in some chocolate chip or blueberries maybe some raisins. Anything is delicious in these bagels!
