
This bread, oh man! It’s sooooo good!! The herby, sweetness, whole wheat-y-ness of this bread just makes you smile…. not only are the flavors wonderful, but the herbs and levain in this bread have major effects on your health, for the good of course. Let’s take a look at the health benefits:
Rosemary: one of my favorite herbs in the garden, rosemary is so good for you and should prepared in one of your meals daily (I mean, shouldn’t all herbs?).

Olive oil and raw honey:

Olive oil is high in antioxidants and high in monounsaturated fat, making it great for your heart. It also lowers blood pressure levels, reduce risk of heart disease, protect against strokes, lower type 2 diabetes, protects against certain cancer cells, and improves bone health. Just make sure your using extra virgin olive oil.

Raw Honey is Anti inflammatory, Antibacterial and high in Antioxidants. It can help morning sickness, Reduces muscle pain, Lowers blood sugar, Improves heart health, Lower cholesterol levels, Helps prevent cancer, Improves brain function, Helps infections, and Good for your skin and hair. Just make sure it’s raw honey.

Makes 2 delicious loafs in about 2 hours.
What’s in it?
- 135g sourdough discard
- 473g/2c warm water (110-115degrees)
- 2 teaspoons active dry yeast
- 1/3 cup raw honey
- 1/3 cup extra virgin olive oil
- 1 tablespoon dried rosemary
- 1 tablespoon dried sage
- 700g/ 5.1/4c whole wheat flour (preferably sprouted)
Rosemary sage olive oil honey:
- 1/2 cup raw honey
- 1/2 cup olive oil
- 2 sprigs fresh sage
- 2 sprigs fresh rosemary
How do ya make it?
- In a bowl of a stand mixer, mix all the ingredients together. Knead dough for 5 minutes, dough will be sticky. let rise until doubled, about 1 hour. Meanwhile, make your honey so it can start soakin those flavors.
- Rosemary sage olive oil honey: place the honey and olive oil in a saucepan to warm up a little bit, just until the honey melts. With a stick blender (or your choice of blender) blend until creamy, like 1 minute. Add sprigs without breaking them into a bowl with your honey mix. Let sit until you need to use it.
- Now place dough on lightly floured surface. Dived in half and place in loaf pan, taking your hands to the long edge of the pan push your fingers under the bread to form a kinda roundness to the bread (pics coming soon) let rise while your oven preheats.
- Preheat oven to 350degrees. Drizzle a few tablespoons of honey over the bread, and place sprigs on top. Bake for 35-45 minutes, or until you press the top and it doesn’t sink. Pull out of oven and enjoy!! Slab some grass fed butter and drizzle that extra honey over the top…. mmm….
