Smokey chipotle soup {with homemade sourdough tortillas}

What makes this Smokey chili soup?

You got the chipotle powder (which is smoked jalapeños), hatch chili, and guajillo chili all married together in this wonderful soup.

What is guajillo chili?

Guajillo chili (pronounced gwa-HEE-yo) is the dried form of mirasol chili and is the second most used chili in Mexico after poblanos (yum!).

What’s in it?

  • 4 chicken breasts
  • 1 box chicken broth
  • 6 cups water
  • 2 tablespoons oil
  • 6 sweet peppers
  • 1 onion, diced
  • 1 whole garlic bud, peeled and diced
  • 1 dried hatch chili
  • 1 dried guajillo chili
  • 2 tablespoons oregano
  • 1 tablespoon smoked paprika
  • 1 teaspoon chipotle powder
  • 1 teaspoon ground guajillo pepper
  • 1 teaspoon cinnamon
  • 1 tablespoon granulated garlic
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne (optional)
  • Salt to taste
  • 1 lemon

How to make it?

  1. In a large pot, sauté onions, garlic, and sweet peppers in oil. Add chicken broth and water, then add chicken breasts.
  2. Add all of the spices to soup and let stew for at least 1 hour or until chicken is shreddable (optionally you can dice the chicken to cook faster)
  3. Serve up and enjoy!!
