
Have you ever tried sourdough tortillas?? If the answer is no, then I’m really sorry, you better get to making these tortillas right now! If the answer is yes, then you know how amazing they are; more pliable, beautiful flavor, perfect browning, oh so good…

The texture is even better then regular tortillas, the flavor is even more intense, the pliability is awesome, and they make amazing burritos and tacos. Plus, they last a lot longer then normal homemade tortillas because the lactic acidosis in sourdough helps persevere good for longer.

Fun history….
The name “tortilla” comes from Spanish and means “small cake”. Oldest found tortillas date back as far as 10,000 years BC and were made of corn. Jews started flour tortillas when they were on the Mexico-Texas border in the 1500’s. They used flour in North Mexico where it was easier to grow wheat vs corn (and boy am I glad!).

What’s in them?
- 6 cups all purpose flour (plus more for dusting)
- 2 cups warm water
- 1/3/130g cup levain
- 1 tablespoon salt
How to make them?
- Place all ingredients in large bowl and mix with a wooden spoon, let sit for at least 30mins then use your hand to finish mixing. Let rise at room temperature for 8-12 hours or overnight.
- Now, turn the dough on we’ll floured surface. If pretty sticky, knead some flour into the dough (not to much:). Divide dough into 32 balls, –the easiest way to do this is to cut the dough into 4 pieces, round each of those pieces into balls and cut them in half, then those pieces in half, then once more those pieces in half until you have all 32 pieces.
- On stove top, preheat a pan over medium high heat. One at a time, took the dough balls as thin as you can then place on preheated pan, once browned, flip to cook other side (this usually takes about 2 minutes).
- Once you have completed all of the tortillas, you are done!! Make up some of your favorite taco or burrito filling, or maybe make this soup, or just eat them how my 6yr old brother does and smear Nutella on them and call it a day, well however you eat your tortillas, enjoy!!
