Garlic Rosemary Sweet potato hash with colorful Swiss chard and bell pepper sauté {topped with farm fresh egg}

Like breakfast as much as I do? Well, you came to the right place. Breakfast is MY FAVORITE!!! Especially when it’s an amazing and healthy breakfast. Layered yumminess, this hash is sure to be on the top of your list as “most amazing breakfasts ever!”

I have always loved a good breakfast hash. usually piled with cheese and loaded with butter:). But I went the lighter route with this one to make it a bit lighter so you don’t feel to heavy after eating it.

Let’s talk about those sweet potatoes! first things first, potatoes are high in fiber which means it will help regularity and bowl movement. Did you know that only 5% of Americans get enough fiber daily? Yikes!

Purple sweet potatoes (not to get confused with taro or ube) are high in manganese, copper, iron, potassium, vitamin B6, and vitamin C. Their high in antioxidants, lower blood sugar levels, anti cancer.

Sweet potatoes are high in vitamin A, C, and B6, potassium, manganese, panthonic acid, copper, niacin. Their good for you gut, fight cancer, support health vision (thanks to beta carotene and vitamin A), good for the brain, supports immune system,

White sweet potatoes are a good source of vitamins C, B2, B6, and E, potassium, copper, manganese, and iron. Similar health benefits as booth sweet potatoes, it’s good for the gut, immune system,

Eggs are a very well-known superfood commonly used in breakfast dishes or baked goods. Their what I like to call them “amazing!!” Eggs are full of Vitamin A, B5, B12, B2, B9, choline, phosphorus, and selenium. They also have a good amount of protein making them great for building muscle and toning up. Eggs… raises good cholesterol, reduce risk of heart diseases, good for eye sight, high in amino acids, good for brain and bone health, and can help strengthen and lengthen your hair.

What’s in it?

  • Farm fresh eggs your way
  • Micro greens to top it off
  • Garlic Rosemary sweet potatoes:
  • 1 purple sweet potato, diced
  • 1 white sweet potato, diced
  • 1 sweet potato, diced
  • 1 whole garlic bud, peeled
  • 1 tablespoon garlic powder
  • 1 tablespoon rosemary
  • Black pepper
  • Salt to taste
  • Olive oil
  • Colorful Swiss chard and bell peppers sauté
  • 1 bunch Swiss chard, chopped
  • 1 red bell pepper (or 4 sweet peppers), chopped
  • Salt to taste
  • Drizzle of olive oil

How to make it:

  1. Garlic Rosemary sweet potatoes: preheat oven to 425°F.
  2. Toss sweet potatoes and garlic in olive oil and spices, spread over sheet and bake until crispy, about 25mins.
  3. Colorful Swiss chard and bell peppers sauté: over medium high heat, sauté chard and bell peppers until tender, about 3 minutes.
  4. Make an egg your favorite way, layer sweet potatoes, then chard sauté, the micro greens, and egg. Enjoy!!
