Peanut butter caramel layered amazing bars {sugar and gluten free}

These are your new addiction, sorry. Layers of wonderfulness coming together in harmony to create amazing flavors and textures that just make you want to eat it all without letting anybody know it’s there…

So these were kinda by accident, like all my good recipes are. One night I just was really, really, craving some healthy tasty bars. So I was looking around at some recipes and just said I’am making my own. I started with a coconut oat bottom then on the stovetop I mixed maple syrup, honey, and butter then just let that all marry together to make a caramel. Then I thought why not add some PB to this stuff and see what happens, I mean, what can go wrong?? So I added the peanut butter, took out the bottom bar, sprinkled some sesame seeds over it, (cause why not?) then poured the pb caramel mixture over it, stuck it in the freezer then hoped for the best. Oh no! I want chocolate on that, so I sprinkled some chocolate chips over it then figured coconut flakes would look pretty so there you go, let it finish freezing then boy was I tired… so I just went to bed and the next day I tried the bars and oh my!! Mom was mad at me… these are like the new best thing and there not full of junk?? Someone’s in trouble…;). I mean, just make them and see for your self!!

Are they dairy free?? So these amazing bars are not dairy free since I put butter in them, (grass fed European butter so it’s not bad for you) but I’m sure you can replace the butter with coconut oil!! If you do, let me know how they work out down below in the commenting box.

Are they sugar free?? Well, technically no, if your using a peanut butter with sugar in it. I used skippy’s natural peanut butter which o normally don’t like using since it has palm oil and sugar added but it does have an amazing texture… and then chocolate chips also have some sugar as well but there just sprinkled on top!! But hey, I didn’t add any more sugar to it!!

Are they gluten free?? Yes they are!! Just make sure if you or someone your making them for us gluten intolerant that you buy gluten free oats.

Ok, ready to make them??

This makes a 9×9” pan worth of delicious amazing bars.

What’s in them?

  • For the bottom layer:
  • 1 1/2 cups oats
  • 1 cup shredded coconut
  • 1/2 cup grass fed butter
  • 1/3 cup honey
  • Pinch of salt
  • For the middle layer:
  • 1 cup maple syrup
  • 1/2 cup honey
  • 1/2 cup grass fed butter
  • 1 cup peanut butter
  • Pinch of salt
  • 1 teaspoon vanilla
  • Extras:
  • 1/4 cup sesame seeds
  • And a sprinkling of coconut shreds and chocolate chips.

How do ya make it?

  1. First, make your bottom layer. On the stove top melt butter and honey together. In a bowl, add coconut shreds, oats, and salt. Pour butter honey mixture over and mix together. Press into a 9×9 pan and bake at 350°F until golden brown on edges. (It will feel soft but don’t worry, it will harden). Sprinkle with sesame seeds.
  2. While the bottom is cooking, on the stovetop melt butter then add maple syrup, honey, and salt. Boil until starting to thicken, about 5 mins. Add peanut butter (you can blend with stick blender if needed) and mix until smooth. Boil for another couple minutes. Pour over the bottom that you sprinkled with sesame seeds.
  3. Top with coconut flakes and chocolate chips then freeze until set, a couple hours. Set into fridge until ready to enjoy. Now, try the amazing!! Enjoy!!
