Oh don’t you just love this time of year!! Christmas lights all around, snow on the ground, and happy faces everywhere:). A Joyous time to celebrate the One who came to give up His life for us!! What’s better to celebrate this time of year then some good ole Christmas cookies?!

These espresso ginger snowball cookies are AMAZING!! The punch of the espresso with the kick of ginger rounded out with sweetness of molasses 👌🏼. Guys, just try them. You may be thinking, ginger?! Coffee?! Huh?! But it’s my favorite combo!! Soooo good…

I bit of history… Mexican wedding cookies, Swedish wedding cookies, Austrian kipferl, snowballs, butter balls, Russian tea cakes, you name it, theses cookies probably have been called that;). With the buttery- crumbly texture of these cookies it’s no wonder they made it around the countries. Originating from the Arabic region, they were traditionally made with lots of different nuts, spices, honey, no butter. So with not a lot of info on where these delicious cookies come from, there still amazing and I decided to put my own twist on them. Adding espresso powder and ginger with other delightful spices and hint of molasses… 😋.

Oh and did I mention they’re rolled in powder sugar that’s touched with powdered vanilla?! Yeah, powdered vanilla. It’s carried my sugar but man is it good!! It’s unlike regular vanilla, it’s more “marshmallow-y”?! I don’t know, but it’s amazing!! It’s sold at our locally hear in North Idaho at super one and natural grocers, so hopefully it’s sold near you too!!


So, what’s in it?!
- • 1 cup butter (I like Kerry gold)
- • ½ cup powdered sugar
- • 1 ½ teaspoon vanilla
- • 1 teaspoon salt
- • 1 ½ teaspoon ground cinnamon
- • 1 ½ teaspoon ground ginger
- • ½ teaspoon ground cloves
- • 1 tablespoon molasses
- • 1 tablespoon instant espresso
- • 2 ¼ cups all purpose flour
- • Powdered sugar for rolling
How do ya make it?!
- Preheat oven to 350° then place parchment paper on a cookie sheet.
- Mix butter in a stand up mixer until light and fluffy, about one minute. Add powdered sugar, vanilla, salt, cinnamon, ginger, cloves, instant espresso, and molasses then mix until mixture is smooth. Mix flour in until the dough comes together. It may seem like it won’t come together but don’t worry, it will:).
- Scoop 1 tablespoon of dough into hand and roll into a ball, then place on cookie sheet.
- Bake for 10-12 minutes until bottoms are just slightly brown. Remove from oven and let slightly cool for about a minute, just until you can handle them. Place about a cup of powdered sugar and powdered vanilla in a small bowl, then roll each cookie in the powder sugar mix until coated. Let cool, re-roll if needed once cooled. Enjoy!!
