Ginger+Sage Kabocha squash soup {delicious +nutritious }

Ok guys: yes this soups is amazing, but eating homemade sourdough bread with it just totally completes it!! I topped my soup with coconut milk, black cumin seeds, and a sage leaf!!

Ok, so What’s in it?!

  • 1 tabsleoon olive oil
  • 1 knob fresh ginger
  • 1 shallot
  • 4 sweet peppers (yellow or orange)
  • 2 tablespoons dried sage
  • 1 small chopped kabocha
  • 1 chopped sweet potato
  • Chicken stock
  • 1/2 teaspoon cinnamon
  • 1 teaspoon turmeric
  • 1/2 teaspoon black pepper
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon cumin
  • 1 teaspoon sesame seeds
  • 1/2 cup coconut milk
  • Salt to taste

How do ya make it?!

  1. Sauté ginger, shallot, peppers, and sage in olive oil until translucent.
  2. Add chopped kabocha and sweet potato then add chicken stock until right below the squash and sweet potato, mix in the rest of the spices.
  3. Boil until soft, about 15 mins. Blend, serve, and enjoy!!
