Ginger shallot beet soup {breast cancer awareness month}

💕~in Honor of Cynthia, for many years of fighting for her life and finding it in the midst of it ~ 💕

After battling breast cancer for over a decade, my nana went to live with Jesus at the young age of 56 years old in 2009. I looked up to her so much!! Even though she couldn’t cook much but burnt rice… I have very amazing memories of rolling meat balls, layering apple crisp, and juicing carrots with that wonderful gal!! 🥰 She taught me how to read at a young age, we would sing and cook together, many great memories were made. Even to this day my favorite color is purple because of her ☺️

Like all of us, Nana wasn’t perfect… raising 6 children on her own left her in a tough place between making money and growing kids. One of which those kids just so happen to be this amazing lady I get to call my mom 🙂 and when they didn’t want burnt rice, mom would make pasta or cookies 😂.

Nana was diagnosed with breast cancer before I was born, but I do remember feeling the grievance of “what ifs” floating around the house. Nevertheless she still made me smile when I saw her, for she new that Jesus Christ has washed away her pain spiritually, and that this earthly pain, won’t last forever!! Today she remains in all of hearts, and boy do we miss her but we know that she’s proudly lookin down upon her offspring with great joy that we all choose the narrow road and that one day, we will all reunite together with our Heavenly Father ❤️

Even though I only knew Nana for the first 6 years of my life, she still holds a big part of my heart. It wasn’t easy watching her go, but knowing she came to know the Lord before she met Him face to face put peace in all our hearts!! Taking her last breaths she wrote on my moms hand “God is Love” as a great reminder of the power our Creator has, and that anyone can be saved with the mercy and grace He has given us!! Miss you Nana!! ❤️ Love from the Potter herd 🙂

For the past few years I’ve been wanting to create a pink food that would honor my nana in breast cancer awareness month, and I finally got to do it!! Never had an excuse, just never got around to it. I made this shallot ginger beet soup to warm up going into fall with something vibrant❤️

Probably the most simple soup recipe I have on here 😂

What’s in it?!

  • 1 shallot
  • 4 garlic cloves
  • 1 inch knob ginger
  • 1 tablespoon olive oil
  • 1 1/2 large beets (or 2 small)
  • Milk
  • Salt
  • Black pepper

How to make it?!

  • 1}. Dice shallot, ginger, and garlic then sauté in olive oil until soft.
  • 2}. Add beets, add water until right over the beets.
  • 3}. Boil until beets are soft, about 20 minutes. Spice to liking. Blend until smooth. Add milk until desired consistency and creaminess (I did about 1/2 cup) serve, then enjoy!!
