Berbere spiced chicken sourdough sandwich ~with Berbere honey goat cheese spread

Love sandwiches as much as I do? Oh good, then you will absolutely love this berbere spiced chicken sandwich…. ~pssst, it’s AMAZING!!!

Wait what?? Berbere? What is that?

Berbere is an awesome Ethiopian spice thats made of chilies, paprika, cayenne, onion powder, ginger, cumin, coriander, cardamom, fenugreek, garlic powder, cinnamon, nutmeg, allspice, and cloves (oh wow that’s a mouth full). This spice is soooooo good!!! If you have never heard of berbere, you must use it, and it’s gonna be your new favorite spice. Nobody really knows the history of bebere seasoning, but that’s ok, it’s amazing flavors make up for that!! You can find it at your local grocery store, or make your own mix by combining….

  • 2 tablespoons pure powdered chilies
  • ¼ cup paprika
  • 1 tablespoon cayenne pepper
  • 1 teaspoon onion powder
  • 1 teaspoon ground ginger
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground fenugreek
  • ½ teaspoon garlic powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon ground allspice
  • ½ teaspoon ground cloves

Why should I use sourdough? And do I need to?

Ok, so first off, no you don’t “need” to use sourdough for this sandwich but it does make it a whole lot better. Plus, sourdough is naturally fermented making it contain lactic acid which is good for your gut, overall health, and well-being read more here.

What’s this whole berbere honey goat cheese spread about?

Think chipotle sauce, only way better.

Well, I guess that’s not right to say about chipotle sauce since I’m not the “biggest fan”of it.

But this spread is like, OUT OF THIS WOLRD…. and some how the goat cheese completely pairs beautifully with the sweetness of the berbere, then I added Greek yogurt in it for the more creamy-spreadable-deliciousness.

What’s the best cheese for these sandwich?

I really like to use the sliced Parmesan since it has more subtle flavor it really lets the berbere shine! But sharp white cheddar weirdly Sydenham great also…. or maybe smoked Gouda? Oh my, the possibilities are endless….

Now let’s make a great sandwich…..

What’s in it?

  • Berbere chicken:
  • 2 chicken breasts
  • 1/2 onion
  • 6 garlic cloves
  • 1 tablespoon olive oil
  • Berbere seasoning (store bought or homemade)
  • Salt to taste
  • 1 teaspoon black pepper
  • Berbere honey goat cheese spread:
  • 4oz plain goat cheese
  • 1/2 cup Greek yogurt
  • 1 tablespoon honey
  • 1 tablespoon Berbere seasoning (store bought or homemade)
  • The sandwich:
  • Bebere chicken
  • Berbere honey goat cheese spread
  • Homemade sourdough bread
  • Pickled onions
  • Sliced parmesan
  • Favorite greens (mine are arugula or super green mix)

So, how do ya make it?

Berbere chicken:

  1. Cut onions and garlic, sauté on medium high heat until slightly golden brown.
  2. Dice chicken, add to onion and garlic mix, season with Berbere, salt, and pepper, place lid on pan and let cook until fully done on the inside of chicken. About 10-15mins.

Berbere honey goat cheese spread:

  1. Mix together all ingredients, blend with stick blender just a few times and your done:).

Berbere spiced chicken sourdough sandwich:

  1. Cut sourdough, spread on some love (aka the bebere honey goat cheese spread).
  2. Place cut chicken pieces on spread, then top with the Parmesan.
  3. Layer some pickled onions. Then some greens.
  4. smash with another piece of bread and enjoy your new favorite sandwich!!!
