Winter salad ~Pomegranate finger lime carrot salad with blood orange coconut vinegar dressing~

This salad is what you are looking for this winter. Bright, cheerful, fresh, in-season salad perfect for any day. Pomegranates, finger limes, blood oranges, micro greens all come beautifully together… sounds pretty amazing to me!

January is a time for cleaning out all those Christmas cookies! Here’s a salad that will detox you from all the wheat and sugar stored up in your gut. Both Pomegranates and Blood oranges are very high in antioxidants making it a great cleanser, while finger limes are surprisingly high in vitamin E, great for blood purification and skin health.

What’s about this dressing?

Oh yeah, this is one of my favorite dressings… based with olive oil I put some fresh squeezed blood orange, coconut vinegar, honey, and some coriander.

Coconut vinegar is a great digestive by helping produce more good gut health and help balance ph since it is high acidity. It may help with weight loss by making you feel fuller for longer, strengthen immune system and promote a healthier heart.

And blood oranges are a great antioxidant, they can help you reduce fat in your organs such as liver, pancreas, etc. making them great for detox time! They are good for your eyes, your skin, and much more. Plus, they taste amazing!!!

Coriander is also great for detoxing and helps you get rid of extra water weight and what-not. Coriander is the seed from cilantro.

What about the ribbons carrots?

I thought ribboning carrots would be scary, to think of a peeler that close to your fingers? But nooooo… it wasn’t hard at all! And they are soooo good in this salad!

Just hold the carrot from the bottom and glide the peeler down the carrot, easy!

Ok so now we got the components down… now for the recipe!! Now of course, you can add chicken and maybe quinoa to this and boom! You got a full on meal. Delicious!!!

What’s in it?

  • Favorite leafy greens ~I like spring mixed with spinach, arugula, baby lettuce, stuff like that.
  • Micro greens ~arugula is our favorite
  • 4 medium colorful carrots ~ribboned
  • 5 finger limes
  • 1 pomegranate ~cut
  • Blood orange coconut vinegar dressing:
  • 1/2 medium blood orange ~squeezed
  • 1 tablespoon coconut vinegar
  • 2 tablespoon raw honey
  • 1/2 cup olive oil
  • 1/2 teaspoon coriander
  • Pinch of salt and black pepper

How to make it?

  1. First, make the dressing. Combine all the ingredients in a bowl or blender. Using your stick blender (or stand up blender) blend for 30 seconds until incorporated. (This is the key for amazingly silky smooth dressing).
  2. Now, assemble the salad: cut the pomegranate, set seeds aside. Ribbon carrots, set aside. On your plate lay a good handful of greens, set ribboned carrots around. Sprinkle pomegranate seeds, the lay a handful of micro-greens on top then squeeze the finger limes over the salad.
  3. Server with dressing on the side since their are some weird people that don’t like to much salad dressing ;).
  4. Enjoy!!!
